My favourite Sunday night dinner!
Ingredients:
sauce
- 3 tablespoons oyster sauce
- 2 teaspoons soy sauce
- 3 tablespoons sherry
- 1 teaspoon sugar
main dish
- 1-2 tablespoons oil
- 3 teaspoons grated ginger
- 2-3 crushed cloves garlic
- 6 spring onions
- 500g minced pork
- 100g bean shoots
- 1 carrot, grated
- rice noodles
- lettuce leaves
- Hoi Sin sauce
Process:
1. Mix all sauce ingredients in a bowl until the sugar dissolves.
2. Add oil to a hot wok. Add ginger, garlic and spring onion and stir for 1 minute. Add pork and cook through. Add carrot and cook for 2 minutes. Add sauce and cook for 3 minutes until it thickens a little.
3. Add rice noodles that have been soaking in boiling water then drained (these bulk up the dish). Add bean shoots until heated through but still crunchy.
4. Serve in lettuce cups and with a big dollop of Hoi Sin sauce. Sunday nights are not the same without this tasty dish!!! My sister does not agree.
