Ingredients:
- 2 cups plain flour
- 2 teaspoons baking powder
- 1 teaspoon bicarb of soda
- 1/3 cup sugar
- 2 eggs
- 80g butter
- 1 & 1/4 cups milk
- 2 cups blueberries (fresh or frozen)
- gooey honey and creamy yoghurt to serve
Process:
1. Sift flour, baking powder and bicarb in a large bowl. Add sugar and make a well. Add eggs, melted butter and milk, stir to combine.
2. Gently fold the blueberries (save some for serving) into the batter. MeltĀ someĀ butter in a heated pan and plop in some spoon fulls of the batter and cook over low heat until bubbles appear.
3. Turn over the pancakes and cook on the other side. Keep warm until you have cooked them all.
4. Sevre warm with extra blueberries, a drizzle of sticky honey and a blob of creamy yoghurt.
